Generally speaking, the 2 coil model is going to consume a bit less power than the ratchet and cam version that will require more in order to be operated. This is why the 2 coil model is often chosen.
There are obviously a lot of applications for relays in an industry, especially in such industries as aerospace, heavy equipment, marine equipment and so forth. These are places where latching relays are going to tend to be used most often. Brands are clearly important to such industries because parts have to be of the highest possible quality since it could be a real nightmare if they happened to fail. One big name in the aerospace industry is leach relays which are well known for their quality, but a modicum of research will reveal quite a few more brands out there, too.
