LED power supply, what do I need?

I am trying to set up an experiment using a Luxeon LED (forward current 700 mA, forward voltage 6.84 V) http://uk.futureelectronics.com/en/technologies/semiconductors/lighting-solutions/high-power-led-emitters/colour/Pages/6803019-LXHL-PM02.aspx.

But I have absolutely no idea how to power this. Could someone please tell me what I will need, I have contacted all of the suppliers but they have either not responded or haven't asked my basic questions.

I have access to universal power supplies, can I use this and connect it to the LED using crocodile clips?

That wouldn't be a very good supply. It's DC to DC, so you'd have to buy another supply to get the DC input for the first supply. It's more for vehicles. If you want to plug it into the wall, you're not going to find the exact right supply, so you can just use one higher than 6.84 volts and at least 1 amp. Then get a $1 50 watt resistor to put in line to get your voltage right.
You can figure you LED as the equivalent of a 10 ohm resistor. So, if you had a 12 volt supply, you'd add an 8 ohm resistor. You could also add a 10 watt rheostat to make the LEDs variable.
